I’ll be honest: I am a big fan of these crackers. I’ve been trying to swap the processed crackers for something that actually makes my body feel good. Enter these 2-ingredient crispy seed crackers.

If you’ve ever looked at the back of a “healthy” cracker box at the store and seen a long list of oils and fillers, you’re going to love this. There is no flour, no oil, and no eggs—just a mix of nutrient-dense seeds and water.

Why You’ll Love Them

These are the ultimate flourless seed crackers. They’re naturally gluten-free, keto-friendly, and vegan, but, more importantly, incredibly satisfying. The seeds (I used a mix of sunflower, pumpkin, chia, and flax) are packed with healthy fats and fiber, meaning you won’t be reaching for another snack ten minutes later.

The Secret Pairing: Homemade “Dry Yogurt”

While these crackers are great on their own, the real magic happens when you pair them with what I call “dry yogurt.” If you’ve never had Labneh-style strained yogurt, you’re missing out. It’s just Greek yogurt that’s been drained of its whey until it’s thick, creamy, and spreadable—almost like a tangy cream cheese. Topped with some fresh raspberries and blueberries, it creates this perfect snack that feels like a fancy bistro lunch.

How to Make Them (The Quick Version)

  1. Mix: Combine your favorite seeds with water (and a pinch of sea salt!).
  2. Wait: Let it sit for 30-40 minutes until the water is absorbed and it becomes a bit “gloopy.”
  3. Spread: Flatten the mixture onto a baking sheet lined with parchment paper as thin as possible.
  4. Bake: Slow-roast until golden and snap-dry.

Ingredients

  • 100 g Sunflower Seeds
  • 40 g Pumpkin Seeds
  • 40 g Flax Seeds
  • 10 g Chia Seeds
  • 1/4 tsp Salt
  • 300 ml Warm Water

INSTRUCTIONS

The Seed Crackers

  • In a large bowl, combine your seed mix, salt, and warm water. Let the mixture sit for about 40 minutes. You’ll notice the water absorbs and the consistency becomes thick and “gloopy”.
  • Preheat your oven to 160°C and line a large baking sheet with parchment paper.
  • Transfer the seed mixture to the pan. Using a spatula, spread it as evenly and thinly as possible. The thinner the layer, the better the crunch!
  • Bake for 1 hour, rotating the pan halfway through to ensure an even, golden-brown toast.
  • Let the crackers cool completely on the pan. Once cooled, run a thin knife or offset spatula underneath the parchment paper to loosen it from the tray.
  • Carefully flip the entire sheet over so the parchment paper is facing up. Slowly and gently peel the paper away from the seeds.
  • Snap the crackers by hand or use a sharp knife to cut them into uniform squares.

The “Dry” Yogurt (Prep the night before)

  • Scoop the Greek yogurt into a double layer of cheesecloth. Bring the edges of the cheesecloth together and tie them securely around a wooden spoon.
  • Place the spoon across the top of a deep bowl so the yogurt hangs in the center without touching the bottom. Place it in the fridge to chill overnight. The excess whey will drip into the bowl, leaving you with a thick, spreadable “dry” yogurt.
  • Remove your thickened yogurt from the cheesecloth and transfer it to a serving board. Arrange your crispy crackers alongside the yogurt and top with your favorite fresh berries.

Storage: Keep any leftover crackers in an airtight container for up to one week to maintain that perfect snap!
